Miso Making Experience

Make your own one-of-a-kind miso

Experience the process of making miso, a fermented seasoning essential to the Japanese diet. In the past, miso was made in individual households, and each household had its own unique flavor. The taste of the miso that you prepare and grow yourself will be truly special!
In this hands-on experience, you will learn the important process of mashing, mixing, and preparing the ingredients from a true miso craftsman. You will take your prepared miso (about 1 kg) home and let it ferment for 6 to 8 months to complete the process. This experience tour is held at the Meiji-ya Soy Sauce Factory, a beautiful wood structure which has been designated as a Tangible Cultural Property of Japan and where you can enjoy its over 100-year-old history.
★Please make sure to check the regulations regarding bringing miso into your home country before applying.

One thing that might ruin it though it nutto! who would have thought?
so please don't eat natto for breakfast on that day. This is to protect the koji-mould which is indispensable for making soy sauce.
Reservations are required.
Unfortunately, we are unable to offer tours or workshops to guests with no prior reservation. Thank you for your understanding.

※No miso-making experience in summer (May to October) as miso ferments easily during this time.

Miso & Soy Sauce Making
You can experience both miso and soy sauce making. After making miso and soy sauce, you can try your hand at making miso soup, a typical Japanese dish. You can also do a soy sauce taste test where you sample different kinds of soy sauce poured over tofu.
